Galette - Sweet or Savory

This delicious pastry is easy and can be used for veggies or fruits to create a fun side dish or main course. Galette's are a rustic pastry pie or tart and doesn't need a pan to bake. Many are savory or sweet and are topped with a cheesy filling that enhances the fresh ingredients that are placed on top. The pastry can be made ahead, refrigerate or freeze and thaw for a quick creative dish. Origin is France but popular in Italy, Germany and England. Be creative with your toppings. This filling will work with many but you can also make your own filling with desired ingredients.


We hope you enjoy our Spyglass Gardens Taste of Summer Galette!

Crust: Combine in a food processor: 1 3/4 cup AP Flour, 1/4 cup grated Parmesan Cheese, 1 Tsp Sugar, Dash of Kosher Salt, 10 TBSP of Ice Cold Butter cut into small pieces, 1 large egg, 1 tsp white vinegar, 1/4 ice water, - Pulse till incorporated, take out onto a piece of parchment paper pat into a disk 1/2 thick wrap and place in fridge for 20 mins.


Next in a bowl combine your filling: 1 cup ricotta Cheese, 1/4 cup grated parmesan cheese, 1 large egg beaten, 1 TBSP lemon zest - mix well and place in fridge.


Select your toppings:

Sliced tomatoes with sautéed mushrooms, minced garlic, shallots and basil leaves

Sliced tomatoes with thinly sliced peppers (hot and sweet) shallots, cilantro, cotija cheese

Sliced Pears, chopped figs or dates, chopped pecans , feta cheese

Sliced Peaches, dust with cinnamon and nutmeg, sliced almonds, goat cheese

Sliced Apples dust with cinnamon, chopped walnuts, chopped cranberries feta cheese

The sky is the limit, berries work wonderfully and can be combined with pears or apples.

Here on the farm we make this a lot and every time it is different!


Assemble and Bake at 400: Roll out your dough in a circle or square, use some flour for dusting, fold up the sides to create the crust boarder. Spoon on your filling spread even, place your toppings on, brush the crust with egg wash or butter and bake on bottom rack for 30 mins and then place on middle to top rack for 30-35 mins . Remove and let rest 15 mins . You can drizzle on Savory ones - Olive Oil - Honey, Real Maple Syrup - Fruity Ones

This year has been our toughest growing year on the farm. Low snow fall, warm winter created an environment for unwanted weeds and bugs to flourish. Many of which perish during our normal cold winters
