Fall is In the Air - also a BUZZ


Crisp mornings, bit of dew on the leaves and leaves falling from the trees. Fall is in the air.

Not only do we welcome cooler weather but fall produce is definitely comfort food.

Juicy peaches, tart pears and the flavor of a Honey Crisp Apple is a great way to enjoy the fruits of fall. Every day we try to take time to preserve our harvest. Canning, freeze drying fruits and veggies. Healthy foods and Tasty Snacks.

Today we harvested honey from our 3 hives. Dawned in our bee suits, and with the help of our Intern Lexi, 5 supers were brought up to the house, carefully removed frames dripping in honey and placed in our extractor. Yup we have a few honey bees flying around in the kitchen. Probably would freak some folks out, but they just want to taste the honey of their labors. All "house" bees have figured out we removed a screen and have flown out! After we removed the honey supers we took a quick look and did a "mite check". They have been storing some honey for the winter in their brood boxes. So that is a good way to start fall. We will treat our bees in a couple of weeks, they do have a low number of mites per 100 bees, treating them will keep them healthy so they can survive the winter. It will take the rest of today extract the honey from 45 frames. We will screen the honey and bottle it once done. Fun Day on the Farm!


Recipe for this week! Roasted Carrots and Horseradish preheat oven 375

In a small roasting dish, 6-10 carrots peeled and sliced in quarters longwise. You can also do coins add 1/4 cup water to dish, place carrots in water, dash of salt and pepper. In a bowl combine grated 2 TBSP Onion, 2 TBSP prepared Horseradish of your choice, 1 cup mayo, 1/2 grated parmesan cheese. Stir and pour over top of carrots. I do cover with foil for 15 mins then bake uncovered for 5 min. Remove and add crushed Soda Crackers - we like a lot so use you judgment , and sprinkle with melted butter. Place back in oven uncovered till golden brown on top. About 10 mins

We love this dish in the fall, great with turkey!
