All winter long here in the Treasure Valley we experience cold winter nites. The wind is sharp and cold and the snow is blown into artisian designs in our yards.

| Wow this weather makes ya want some comfort foods!!! This weeks bag will include, Tomatoes, Cucumbers, Assort Peppers, Canteloupe, Fruit Bag, Heirloom Potatoes, Sweet Onion. Each member will receive $5 extra goodies in their Half Share bags ($10 extra for Full Shares) for the next 4 weeks. This week every one will receive Honey and more.

Steves Zesty Salsa

| In a large bowl combine the following: For small groups cut in half...4 med to large tomatoes chopped & 5 roma tomatoes chopped...1 large onion diced, 2 cups fresh cilantro chopped, 1-2 Jalapeno peppers finely chopped remove seeds if you are a chicken!...1-2 tomatillo diced, 1 lime juice and some pulp...1 tbsp of salt...It is a must you taste as you add!...Some like it mild but Steve loves it Zesty!...Enjoy fresh or refrigerate up to 3 days...but once you have the chips in the bowl it will be gone in a flash!

Pasta with Canteloupe and Prosciutto Salad

| This is not only pretty but tasty!...Use bowtie pasta cook as directed...make the sauce in a separate bowl....1 1/2 tbsp lemon juice, same with white wine vinegar or a dry white wine...1/4 tsp dijon mustard, dash of salt and pepper, 1 garlic clove minced, 2 -3 tbsp extra virgin olive oil,...wisk together, toss with 1 cup baby arugula, 3/4 cup diced canteloupe and cooked pasta... top with thinly sliced red onion, 2-3 tbsp mint leaves, 2 oz proscuitto diced and 1/4 shaved parmigiano cheese....Wow-this is good!

Griddle Cakes

| Midwest comfort food...loved by all...1 1/2 cup self rising white cornmeal mix...1/2 cup all purpose flour, 1 tbsp sugar, 3 tbsp melted butter, 2 large eggs beaten, whisk together all ingredients...this is where you can go crazy, at this point you can add, chopped crisp bacon, jalapenos, okra, herbs all finely chopped, use your imagination...Stir together and on a hot griddle with a little canola oil drop 1/4 cup and make pancakes not too big ... brown flip and use like bread for sandwiches...great with mayo and fresh tomatoes, great with chicken salad, tuna salad, smoked salmon, egg salad....enjoy!

Potatoes and Ham!!!
Scalloped Potatoes and Ham!
A Spyglass Winter favorite...Thanks Mom!
1 lb cooked ham diced chunky
2 lbs prebaked russet potatoes-cool then thinly slice leave skins on.
Place in baking dish , sprinkle with black pepper.In a skillet make a rue- 1/4 cup butter melt stir in 1/4 flour brown then add 2 cups milk. Cook till thick, pour over potatoes and ham. Can add minced garlic and onions, Cover with grated cheese bake at 350 for 1 hour...Absolutely wonderful on a cold winter nite!

Taco Bake

| In a oven ready skillet saute 1/2 med sweet onion, 1 cup chopped aneheim onion in olive oil. Brown 1 lb ground beef...Add 2 tsp or more chile powder and minced garlic. Add 1 can chili
beans with sauce...spice it up if you wish with diced jalepenos..we do!In a bowl make cornbread either from scratch or from a box, spread over top of skillet goodies. Bake at 400 till corn bread is done....Super fun on a winter day after playing in the snow.... |
